  • Fresh parsley or cilantro (for garnish)

  • For the Honey-Mustard Dressing:

    • 2 tablespoons olive oil

    • 1 tablespoon honey

    • 1 tablespoon Dijon mustard

    • 1 tablespoon lemon juice (or lime juice)

    • Salt and pepper to taste

    Instructions

    1. Season Chicken – Rub chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.

    2. Grill – Grill or pan-sear over medium heat 5-6 minutes per side until fully cooked and slightly charred.

    3. Rest – Let rest a few minutes, then cut into cubes or slices.

    4. Assemble Salad – In a large bowl or plate, add mixed greens as the base.

    5. Layer – Top with grilled chicken, pineapple chunks, avocado slices, diced tomato, and red onion.

    6. Make Dressing – Whisk together olive oil, honey, Dijon mustard, lemon juice, salt, and pepper until smooth.

    7. Serve – Drizzle dressing over salad. Garnish with fresh parsley or cilantro. Serve immediately.
