Make the pudding – In a separate bowl, whisk together the instant vanilla pudding mix and 1 cup milk. Stir until smooth and let sit for 2–3 minutes to thicken properly.
Combine gelatin and pudding – Once the gelatin has thickened slightly, gently fold in the pudding mixture. Stir until the two are well combined. The texture should be thick but still spreadable.
Fold in whipped topping – Gently fold the thawed whipped topping into the gelatin-pudding mixture until smooth and creamy. Don't stir too hard or you'll deflate the whipped topping.
Add oranges and marshmallows – Fold in the drained mandarin oranges and mini marshmallows gently, being careful not to crush the oranges or marshmallows.
Chill and set – Cover the bowl and refrigerate for at least 1 hour (or until fully chilled and set). The longer it sits, the better the flavors blend.
Serve – Serve cold, straight from the fridge. Top with optional coconut or pecans if you want extra texture.
