Ingredients (Serves 10–12)

For the Crust:

  • 1½ cups crushed graham crackers

  • ¼ cup sugar

  • ½ cup melted butter

For the Cheesecake Filling:

  • 2 cups cream cheese (softened to room temperature)

  • 1 cup [translate:ube halaya] (purple yam jam — find in Asian markets or online)

  • 1 cup heavy cream

  • ½ cup sweetened condensed milk

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon vanilla extract

  • 2 teaspoons gelatin powder (or 1 packet)

  • 2 tablespoons hot water

For Topping (Optional but Recommended):

  • Fresh blueberries

  • Whipped cream

  • Additional [translate:ube halaya] drizzle


Instructions

  1. Make the crust – In a bowl, combine crushed graham crackers, ¼ cup sugar, and ½ cup melted butter. Mix until it resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup to pack it down evenly. Chill in the fridge for 20–30 minutes while you make the filling.
