For the Crust:

1½ cups crushed graham crackers

¼ cup sugar

½ cup melted butter
For the Cheesecake Filling:

2 cups cream cheese (softened to room temperature)

1 cup [translate:ube halaya] (purple yam jam — find in Asian markets or online)

1 cup heavy cream

½ cup sweetened condensed milk

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

2 teaspoons gelatin powder (or 1 packet)

2 tablespoons hot water
For Topping (Optional but Recommended):

Fresh blueberries

Whipped cream

Additional [translate:ube halaya] drizzle
Instructions

Make the crust – In a bowl, combine crushed graham crackers, ¼ cup sugar, and ½ cup melted butter. Mix until it resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup to pack it down evenly. Chill in the fridge for 20–30 minutes while you make the filling.
