Knead – Knead in softened butter, a little at a time, until smooth and elastic (8-10 minutes by hand or 5-6 minutes with dough hook). Knead in chocolate chips.
First Rise – Place dough in greased bowl, cover, and let rise in warm spot until doubled (1½-2 hours).
Shape – Punch down dough and divide into 12 even pieces. Roll each into smooth ball and place on parchment-lined pan, slightly spaced. Cover loosely and let rise 45-60 minutes until puffed and touching.
Make Crosses – Mix flour and water to form thick paste. Pipe thin lines across buns in cross shape using piping bag or small plastic bag with tip snipped.
Bake – Preheat oven to 350°F. Bake 25-30 minutes until firm and hollow-sounding when tapped.
Glaze – While warm, brush tops with warmed apricot jam or honey for glossy finish.
Serve – Enjoy fresh and warm with butter or chocolate spread.
