PREPARATION

Preheat the oven to 180 °C (about 350 °F).

Start by beating the egg whites until stiff.

Then add the fructose and vanilla extract powder and continue beating for a few more moments, until the mixture is firm.

Next add the flour and the cream and keep mixing until you get a smooth, homogeneous batter.

On a baking sheet lined with parchment paper, place small spoonfuls of batter using a tablespoon and flatten them into small discs.

Bake for 6 to 7 minutes.

After baking, lift the discs off the sheet with a spatula, roll them up, and let them harden.

Fill the “cigars” with pastry cream using a piping bag or simply a large tip/nozzle.
Additional tips: You can use pastry cream to fill various cakes and pastries, such as éclairs, mille-feuille, or even rolled cakes.
