In a bowl, mix the eggs, fructose, and vanilla extract. Add the almond flour and cornstarch. Whisk everything together.

Heat the almond milk until it comes to a boil. Once it’s boiling, gradually add it to the egg-and-flour mixture while whisking constantly to prevent lumps.

Then pour everything back into the saucepan over low heat and continue cooking, stirring constantly in a figure-eight motion, until the mixture is smooth and reaches the desired thickness.
