🍟 Super Easy Crispy Fries (Just 2 Potatoes & Oil)

2 medium potatoes (peeled and cut into strips)

1 teaspoon salt (for the water)

Oil for frying (vegetable or canola)

Cold soak magic – Peel and cut potatoes into fry-sized strips. Place them in a bowl of cold water and let sit for 10 minutes. This removes starch and helps them get crispy, not soggy.

Hot water shock – Heat 1 liter of water with 1 teaspoon salt until boiling. Carefully submerge the potato strips in the boiling water for JUST 20 seconds. This cooks the outside slightly and prevents splashing in the oil. Remove immediately and set aside.

Dry them completely – Place the hot potatoes on a clean cloth or paper towels and dry them WELL. Any moisture = splashing oil = burnt fries. Pat them down, get them as dry as possible. This is key.

Heat the oil – Heat your frying oil in a deep pan or fryer to about 350°F (175°C). The oil needs to be HOT. If you don't have a thermometer, drop a single fry in — if it sizzles immediately and floats, you're ready.

Fry in batches – Working in small batches (don't overcrowd), carefully place fries into the hot oil. Fry for 3–5 minutes until golden brown and crispy, stirring occasionally so they cook evenly on all sides.

Drain & season – Remove fries with a slotted spoon and place on paper towels to drain excess oil. While still hot, sprinkle generously with salt. Serve immediately while they're at their crispiest.
