Ingredients (Serves 6–8)

1 (32 oz) bag frozen tater tots (don't thaw!)

1 lb breakfast sausage or bacon (cooked and crumbled)

1 small onion (finely diced)

1 cup shredded cheddar cheese

1 cup shredded mozzarella or Monterey Jack cheese

8 large eggs
-
1½ cups milk (whole or 2%)

½ teaspoon garlic powder
-
½ teaspoon salt
-
ÂĽ teaspoon black pepper

Optional: ½ cup bell peppers or spinach (chopped)
Instructions

Prep the dish – Preheat oven to 375°F. Grease a 9×13 inch baking dish with butter or cooking spray.

Layer the base – Spread frozen tater tots evenly on the bottom of the dish. Don't thaw them — frozen is perfect.

Add the meat – Sprinkle cooked, crumbled sausage or bacon over the tots. This is where the flavor comes from.

Veggies & cheese – Scatter diced onion (and any optional peppers or spinach) over the meat. Then sprinkle both cheeses evenly over the top.

Make the egg mixture – In a bowl, whisk together 8 eggs, 1½ cups milk, garlic powder, salt, and pepper until smooth. This is your binding liquid.

Pour it in – Slowly pour the egg mixture over all the layers. Try to get it distributed evenly, but don't stress if it's not perfect — it'll settle as it bakes.

Bake – Bake uncovered for 40–45 minutes until the eggs are set and the top is golden brown. You want it firm in the center, not jiggling.

Rest & serve – Let cool for 5–10 minutes before slicing. This makes it easier to cut into nice squares.

Make-Ahead Hack: Assemble the whole thing the night before, cover with plastic wrap, refrigerate, and bake in the morning. Add 5–10 minutes to baking time if baking from cold.
