Add carrots & cabbage and cook 3–4 mins until slightly soft.
Add shredded chicken, soy sauce, pepper, paprika, turmeric & salt.
Mix well, cook 2 mins, then remove from heat and let cool completely.
Roll the Spring Rolls

Place a sheet on a flat surface (corner facing you like a diamond shape).

Add 2 tbsp of filling near the bottom corner.

Fold the bottom corner over the filling, fold sides inward, and roll tightly.

Brush end with egg to seal.
Deep Fry

Heat oil on medium.

Fry rolls until golden brown and crispy (about 3–5 mins).

Drain on paper towel.
