🥐 Spinach & Cheese Puff Pastry Pockets
Ingredients (6 pockets)

1 sheet puff pastry, thawed (or 2 small sheets)

2 cups fresh spinach (or 1 cup frozen, thawed & squeezed dry)

1 cup mozzarella, shredded

½ cup ricotta or cream cheese
-
¼ cup feta cheese (optional for flavor)

1 clove garlic, minced (optional)

Salt & pepper to taste
For brushing:

1 egg yolk + 1 tbsp milk (egg wash)

Prepare the Filling

Sauté spinach with a tiny bit of oil just until wilted (if fresh).

If using frozen, squeeze out all water.
