Chicken with Buttered Noodles

Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt and black pepper, to taste

  • 2 tablespoons olive oil

  • 1 tablespoon butter

  • 8 oz mushrooms, sliced

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • ½ teaspoon dried oregano

  • 1 cup chicken broth

  • 1 cup heavy cream

  • 12 oz wide egg noodles

  • 3 tablespoons butter (for noodles)

  • 2 tablespoons fresh parsley (for garnish)

  • Grated Parmesan (for topping)

Instructions

  1. Cook Chicken – Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook 4-5 minutes per side until golden. Remove and set aside.

  2. Sauté Mushrooms – Add butter to the same pan. Cook sliced mushrooms 5 minutes until browned. Add garlic, thyme, and oregano. Cook 1 minute.

  3. Build Sauce – Pour in chicken broth, scraping up browned bits. Simmer 5 minutes until slightly reduced.

  4. Finish Sauce – Stir in cream and simmer 3-4 minutes until thickened. Return chicken to pan to heat through.

  5. Cook Noodles – Boil egg noodles per package instructions. Drain and toss with 3 tablespoons butter.

  6. Serve – Plate noodles, top with sliced chicken and creamy sauce. Garnish with parsley and Parmesan.
