  • Mix – Whisk together cooled mashed potatoes, beaten eggs, ¾ cup cheese, and chives. Season with salt and pepper. Don't overmix.

  • Fill – Use a small scoop to portion mixture into muffin cups. Top each with remaining cheese.

  • Bake – Bake 15-20 minutes until puffed and golden brown.

  • Cool & Serve – Let rest 5 minutes, then gently remove with a butter knife. Serve warm with sour cream or your favorite dipping sauce.
