Slice the rolls – Take the entire package of Hawaiian rolls and carefully slice horizontally through the middle using a serrated knife, separating the top halves from the bottom halves. Keep them on the baking sheet (or transfer to a baking dish if you prefer).
Layer the bottom – Place the bottom halves on your prepared baking sheet. Layer each one with a slice of ham (fold it to fit if needed), then a slice of cheese on top. You're building the base.
Top and press – Place the top halves of the rolls on top, pressing gently to close the sandwiches.
Make the butter mixture – In a small bowl, whisk together melted butter, brown sugar, Dijon mustard, garlic powder, onion powder, and black pepper. This is the magic sauce.
Brush the tops – Using a pastry brush (or spoon), brush the butter mixture generously over the tops of all the rolls. Get into all the nooks and crannies. If you're using sesame seeds, sprinkle them on top while the butter is still wet.
Bake – Bake for 12–15 minutes at 350°F until the rolls are golden brown and the cheese inside is melted. You'll smell the buttery, cheesy goodness — that's when you know it's ready.
Cool slightly – Let cool for 2–3 minutes so they're not scalding hot, then serve immediately while the cheese is still melted and the rolls are warm and soft.
