  • ¼ teaspoon red pepper flakes (for heat)

  • 2 cloves garlic, minced

  • ¼ teaspoon cayenne pepper

  • 2 Tbsp cream cheese (for creaminess)

  • Fresh chives or parsley (for garnish)

Optional Dipping Sauces:

  • Mustard (Dijon or yellow)

  • Hot sauce

  • Ranch dressing

  • Sriracha mayo

Instructions

Prepare the Oven and Pan:

  1. Preheat your oven to 375°F (190°C).

  2. Line a baking sheet with parchment paper or spray lightly with non-stick cooking spray.

Cook the Sausage:

  1. In a large skillet over medium heat, add the bulk breakfast sausage.

  2. Using a spatula or wooden spoon, break the sausage into small crumbles as it cooks, stirring occasionally to ensure even cooking.

  3. Cook until the sausage is completely browned and no longer pink, about 5-7 minutes. The sausage should be in bite-sized crumbles, not large chunks.

  4. Once fully cooked, remove the skillet from heat and drain any excess fat if necessary. (A little fat is fine and adds flavor!)

  5. Allow the sausage to cool slightly, about 2-3 minutes. Warm sausage is easier to work with than hot sausage.

Combine Filling:

  1. In a mixing bowl, combine the cooked sausage with the shredded mozzarella cheese.

  2. Mix well, using a fork or your hands, to ensure the cheese is evenly incorporated throughout the sausage. This ensures every roll gets cheese in every bite.

  3. Optional: Add additional seasonings like Italian seasoning, red pepper flakes, or garlic powder if desired.

Prepare the Crescent Rolls:

  1. Open the refrigerated tube of crescent rolls and carefully separate the dough into individual triangles following the perforated lines on the package.

  2. You should have 8 triangles total.

  3. Lay each triangle on a clean surface with the wide end (the base) facing you.

Fill and Roll:

  1. Take a generous spoonful of the sausage and cheese mixture (about 2-3 tablespoons) and place it on the wide end of each crescent triangle.
