Ingredients

  • 100g (½ cup) active sourdough starter (bubbly and at peak)

  • 440g (2¾ cups) all-purpose flour (recommend using a scale)

  • 260g (1 cup 1 tbsp) water

  • 6g (1 tsp) salt

  • 1+ cup fresh or frozen blueberries

  • 8oz+ cream cheese, cut into small cubes

Optional Toppings:

  • Extra blueberries for topping before baking

  • Fresh herbs (rosemary sprigs)

  • Fleur de sel (flaky sea salt)

Instructions

Prepare the Starter:

  1. Feed your sourdough starter 4-12 hours before making the dough. It should be very active and bubbly, roughly doubling in size after feeding.

  2. Active starter is crucial for this recipe—a sluggish starter will not rise properly.

Mix the Ingredients:

  1. In a large bowl, combine the active sourdough starter, water, flour, and salt.

  2. Use a dough hook if you have a stand mixer, or mix by hand with a sturdy spoon and then use your hands.

  3. Mix until all the flour is incorporated and you have a shaggy dough. Some flour streaks are fine at this stage.
