8–10 egg roll wrappers

Instructions:
Make the filling:
In a skillet, add apples, brown sugar, cinnamon, lemon juice, cornstarch, and butter if using.
Cook over medium heat for 5–7 minutes, stirring occasionally, until apples soften and the mixture thickens.
Let it cool slightly before using.
Assemble the rolls:
Place an egg roll wrapper in a diamond shape.
Add 1–2 tablespoons of filling to the center.
Fold the bottom up, then fold in the sides, and roll tightly.
Seal the edge with a bit of water.
Fry:
Heat oil to 175–180°C (350°F).
Fry rolls for 2–3 minutes on each side until golden brown and crispy.
Remove and drain on paper towels.
