AMERICAN SOURDOUGH ENGLISH MUFFINS RECIPE

Ingredients:

Ingredient Quantity
Active sourdough starter (100% hydration) 120g (½ cup)
Warm milk (or water for dairy-free) 250g (1 cup)
All-purpose flour 360g (3 cups)
Sugar 1 tbsp
Butter (softened) 2 tbsp
Salt 1 tsp
Semolina or cornmeal (for dusting) As needed

Instructions:

1. Make the Dough (Night Before)

  1. In a bowl, mix starter, warm milk, sugar, and butter.

  2. Add flour and salt, then mix until a soft dough forms.

  3. Knead 5–8 minutes until smooth.
